Taco Sour Cream Rice Bake

 

Taco Rice Bake – loaded with taco meat, beans, Rotel, cheese, and rice. It’s a full meal in one dish! We like to top the casserole with our favorite taco toppings – cheese, sour cream, jalapeños and guacamole! This a great change to our usual taco night!!

Taco meat, rice, and cheese baked to perfection! Can be served great on its own, in lettuce wraps, or your favorite type of taco shell! Garnish options are endless: including avocado, shredded lettuce, taco sauce, sour cream, beans, and more! A great dish for the whole family.

This Sour Cream Rice Bake is pure comfort food. It’s ridiculously easy to make, with just six ingredients. It takes about 40 minutes from start to finish. The flavor is somewhat mellow and the rice is super creamy.

Serve a deliciously flavorful rice casserole dish at dinnertime tonight! The whole family will love trying this cheesy Tex-Mex Beef & Rice Casserole.

 

INGREDIENTS:

  • 3 cups cooked rice
  • 1 lb lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1 (15 oz) can tomato sauce
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 1/2 cups cheddar cheese, grated
  • Kosher salt and freshly ground pepper, to taste

PREPARATION:

  1. Preheat oven to 350°F and grease a 9×9-inch baking dish with nonstick spray.
  2. Set aside.
  3. In a large skillet, season the ground beef with taco seasoning and brown until cooked through.
  4. Add tomato sauce and simmer for 5 minutes.
  5. In a medium bowl, stir together rice, cottage cheese, and sour cream.
  6. Season to taste with salt and pepper and spread mixture in bottom of prepared baking dish.
  7. Top with meat sauce and sprinkle with cheddar cheese.
  8. Bake until cheese has melted and sauce is bubbly, 20-25 minutes.

  • Preheat oven to 400 degrees F (200 degrees C).

  • Mix egg beat and milk in a shallow dish or bowl; place crushed chips in a separate shallow dish or bowl. Dip chicken first in egg mixture, then in crushed chips to coat. Place coated chicken on an ungreased cookie sheet.

  • Bake in preheated oven for 10 minutes; turn sides and bake for another 10 minutes.

INGREDIENTS

 

DIRECTIONS

  • Preheat grill for medium heat and lightly grease the grate.

  • Mix water, coconut sugar, and yeast in a measuring cup until well combined. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes. Add avocado oil, salt, and Italian seasoning; stir well.

  • Combine cassava flour, arrowroot powder, and gelatin in a bowl. Pour in yeast mixture; stir with a wooden spoon until well combined. Add more cassava flour as needed, 1 tablespoon at a time, until a dough forms.

  • Divide dough into 4 equal portions; knead and shape into balls. Dust a piece of parchment paper with arrowroot powder; place 1 dough ball on top and generously dust the top. Cover with another piece of parchment paper; roll out into a 4-inch pizza crust. Repeat this step with remaining dough balls.

  • Remove top parchment paper. Grease top of each crust with coconut cooking spray; flip and place crusts on the grill, greased-size down. Cook until golden brown, about 7 minutes.
